This kind of meal I cook when I am very hungry in the morning but have only short period of time before leaving to work. To reduce the fat content, you may add turkey or chicken instead of bacon ( I cheated today with bacon ) and, instead of 2 whole eggs, add only one whole egg or just the egg white. Then you have the minimum fat content with the olive oil you use for frying with the pan.
8 cherry tomatos, halved
2 table spoons of minced bacon/sliced turkey filet/chicken filet
2 whole eggs, 2 egg white
2 table spoons milo flakes
50 ml skim milk
salt, pepper and spices as you wish (I added sweet paprica, chili flakes, black pepper, sea salt and oregano)
Fry tomatos with bacon in pan with a little olive oil. mix eggs, milk and milo flakes in a bowl and pour into pan when tomatos are well cooked. Cover with lit and cook for few minutes until omelet ist ready.
I would guess the total preparation time about 15 minutes. Enjoy!
