Breakfast preparation: homemade fruit yoghurt with oats

Today in the evening i had a fresh juice from oranges, apples and pomgrenade. Delicious!

Then i used a part of the juice for breakfast preparation: I mixed the juice with yoghurt and skim curd cheese.

Then i added oats. That will be a breakfast full of fresh energy!

1 – cook polenta with veggies and vegetable stock.

2 – cool it down in a shape of your choice.

3 – fry it and turn it carefully wih two suitable tools regularly.

Herbs and spices for magic, energy, function and chemistry

Today I stumbled across some pages about beautiful herbal gardens. I am used to refine my food with fresh, frozen and also dried herbs. It means a lot to me to have a good choice of herbs at home and to stimulate body functions with it. I learnt it very early in life to take care of my health and also to take care of what I eat. My mom was a very good cook, and sport always meant a lot to me. If you want to perform well and feel good, you definitely need to watch your food intake carefully.

My herbs & spices shelf: from curry, mixed spices, paprika, onion and garlic powder to different dried herbs and different sorts of salt and pepper. Nice to have them when you want to cook tasty!

Today, for cooking my bulgur with celery and tomato, I used for example fresh parsley and chives. On the one hand it is important for me as a philosophy to use herbs as natural healing plant which gives back so much energy. The frsher, the better, but you also may store frozen herbs in your freezer. Frozen herbs get quick-freezed and it is prooven that most of the vital substances are kep in the plant like this. And additionally I think the dried stuff, which you see on my shelf at the bottom right, doesn`t really taste good. There is no flavor left. So, of course, the fresher the herbs, the better is the aroma and finally your food!

On the other hand, I know that in traditional herbal medicine lots of herbs have been used for thousands of years for a good reason: healing body and soul.

Reading further about this topic in Wikipedia (http://en.wikipedia.org/wiki/Herbalism), there are four major ways of herbal usage of our ancestors (and they still exist in our times).

Four ways to use plants as medicine

Magic. I always have to think about Jim Morrison first who switched to the role of a shaman (http://en.wikipedia.org/wiki/Shamanism) in the movie “The Doors” by Oliver Stone (http://de.wikipedia.org/wiki/The_Doors_%28Film%29). Even if he had nothing to do with healing herbs, except the stuff which is allowed in California for medical use ;-) ) A Shaman is believed to be a person who can access a sphere with a different state of consciousness in which he also is able to communicate with good and bad spirits

Energy. The use of traditional herbal medicine, overwhelmingly popular e.g. through Traditional Chinese Medicine and Indian Medicine (Ayurveda). I like the idea of energy in natural ingredients and I believe in it. Herbs are giving energy. They save substances from the four elements and, when you eat it, you take over this energy. Plain and simple.

Function. Herbs influence body functions. You remember it when you do fasting or visit the clinic of an alternative practioner. Herbs can clean your body and activate organs.

Chemistry. Herbs work synergistically. If you produce the right combination of herbs, they have a strong effect which each of them would not have on its own. The whole is much more than the sum of its parts ;-)

At the bottom line you can read a lot about the positive effects of herbs. Keep reading, keep reading…and still not knowing it all. All I know is that herbs have a nice taste in food and are good for your soul and body – why not use it? Afer a long day: new training cycle, new forum and wiki and a dinner ;-)

…you have to think about your body and soul. I started a new training cycle and will compare notes with you during the upcoming 8 weeks about the creation of an active kickoff into 2013. For this also a new forum and a wiki are at our disposal ;-) Anyone who wishes to take part in the content creation of the wiki and the exchange in the forum is welcome to do so.

Today I arrived late after training, but it still was early enough for the preparation of my tomorrow`s lunch – even if I am close to falling asleep at the desk.

Find here the brief recipe, that you also can still cook at 10 pm:

Bulgur with pepper bell and leek:

1 cup of bulgur
2 elongated pepper
some centimeter of leek (mmmh…about 10 cm minced)
3 cups of water
2 tea spoons vegetable stock
cardamon to your taste

Mince pepper and leek and cook with bulgur in water briefly. Intermix vegetable stock, let it cook untill water is evaporated (about 20 minuten).

I just let it cool down to take the dish away for lunch tomorrow.

For breakfast I will have skim natural yoghurt with oats and banana. In addition I mostly prepare a sandwich with wholemeal bread with curd cheese, ham and another skim cheese. I also always take fruits with me (at the moment I have lots of apples at home because of my juicer, Golden Delicious and Braeburn).

I think this through on the evening before, then I know how to get up, I won`t be stressed in the morning and ain`t going to buy over priced snacks on the next day which I feel bad about.

My wellness saturday with smoothie recipe and shopping list

On saturdays I get my food supplies for the upcoming week. This time, I took care that i can have fresh juice in the evening of all days per week. See below my fruit supply for the upcoming week, which I process with my juicer.

I often experiment with diverse ingredients, but also like simple recipes. The apple orange smoothie is my actual favorite. I like it especially with apples of the variety “Golden Delicious”.

PS: Don`t forget your training! With so many vital substances running will feel easy ;-)

When you start to workout, your body can supply the energy needs mostly from `glycogen`. Glycogen is a substance into which your body breaks down carbohydrates and with which energy is stored in your body for an effort up to two hours, depending on type and intensity of training. After the depletion of this energy source you have to take in about 30-60g of carbohydrates per hour if you want to avoid a decrease in performance quality,

The `power house` of the muscles, the so called “mitochondria”, only can use glycogen directly, so everything you eat has to be broken down into glycogen before the muscle can effectively use it.

How to control fat burning

To understand how you can burn fat or lose weight you first have to know how your body stores `fat` as an energy source. This will lead to an understanding how to avoid gaining weight and how to lose weight effectively. This simple process has its roots in the metabolism of carbohydrates.

Glycogen is the most important energy source of the human body which supplies organs and cells. A lack of glycogen results in a disturbance of the function of organs and cell metabolism.

The blood sugar level has a central function in the carbohydrate metabolism, which is mainly determined by the supply, consumption and storage of glucose as glycogen in the liver.

There are different kinds of carbohydrates, monosaccharide, disaccharide and polysaccharide. Disaccharide and polysaccharide are broken down in monosaccharide so that the energy can be resorbed in the small intestine. From there it is transported with blood circulation to cell metabolism and transported primary to the liver.
To store glucose in the liver it has to be broken down into glycogen. About 150 g glycogen can be stored in the liver and in the muscles. Following a physical activity will result in depletion of this depot first, because the body can transform it into energy quickly.

If the storages in the liver and the muscles are fully charged with glycogen, the rest will be stored as fat.  This is the critical point to understand the fat burning and weight gaining process: if you eat too much carbs, and keep on eating, more and more fat is stored in your body. The solution for effective weight loss therefore is regular exercising on the one hand, following a balanced low to medium carb diet on the other hand. Chose preferably carbohydrates with a `low glycemic index` or low `GI`, because this kind of food is the most healthy and affects your blood sugar level less than food with a high GI.

What is the meaning of the `glycemic index` and glycemic load of food for your daily life?

The glycemic Index (glyx) of a food type shows the effect of food containing carbohydrates on the blood sugar level. A wide spread opinion still is that the glyx has an important role for reduction of body fat. Today, there are several researches which show that the blood sugar level is influenced by a few factors, which can even vary from day to day and from person to person. For weight loss the `glycemic load` of food is more important, because it also reflects, beside the type of carbohydrate, the amount of food consumed.

A daily negative caloric budget, meaning that you eat less than the amount of calories you actually need, still is considered the best choice to reduce body fat. No evidence exists that nutrition with low glycemic load has the best effect on human health, but it is assumed that a balanced nutrition with overall low glycemic load will serve you best in the long run to reduce weight and keep / improve health.
